Baked Asparagus with Bacon in Hollandaise sauce
Directions: Keep 4 stalks of asparagus in the centre of each strip of bacon and sprinkle with salt and pepper. Wrap bacon around the stalks and secure with a toothpick. Place asparagus bundles on baking sheet and bake at 400° for 20 minutes or until asparagus is tender and bacon is crisp. Hollandaise sauce recipe

- Egg Yolk – 4no
- Lemon Juice – 1 teaspoon
- Butter – 1 small cube
- Mustard paste or powder – 1 teaspoon
- Put the bowl of egg yolks over a pan of gently simmering water (double boiler). Add 1 tablespoon of lemon juice and 1 teaspoon of mustard. Whisk together well. Gradually add small splashes of butter to the bowl, whisking well between each addition. Spread the sauce on the backed Asparagus before serving.
