Roasted Sweet Potato & Carrot Soup
This delicious and wholesome soup, could actually become a meal itself, maybe accompanied with a light salad. Go light this summer!

Ingredients
Sweet potatoes cut into chunks 500 gm
Carrots cut into chunks 300 gms
Onions finely chopped 2
Garlic cloves crushed 2
Vegetable stock 1 ltr
Cashew cream / coconut milk 100 ml

Method

Roast the sweet potatoes and carrots with salt and different seasonings of your choice in an oven for about 20 minutes, or until caramelized and tender. Allow to cool.
In a saucepan, roast the onions until softened. Add garlic and roast for a while. Add stock, and simmer for 10 minutes. Allow it to cool.
Add the roasted vegetables in the stock and blend. Heat it with seasonings and cashew cream or coconut milk.
Garnish with cashew cream and relish.
