Red chilli powder
How to prepare
Heat oil in a pan. add ¼ tsp mustard seeds and crackle them.
Add ½ tsp cumin seeds and saute till they change color
add 1 tsp finely chopped ginger, ½ tsp green chilies and a pinch of asafoetida. stir and saute for 10 to 15 seconds till the raw aroma of ginger goes away.
Now, add chopped tomatoes
Time to spice up: add ¼ tsp turmeric powder, ¼ tsp red chili powder, ½ tsp coriander powder and ½ tsp cumin powder. to make the dish more spicy, you can add up to ½ tsp red chilli powder.
stir well and saute for a minute.
add ¾ tsp sugar and salt as required.
saute till the tomatoes cook well.
add ½ cup water.
Check consistence and add water as per your requirement
pour the tomato sabzi in serving bowl
Sprinkle sev just before serving to avoid it from getting soggy
garnish with fresh coriander leaves
Serve with roti or Gujarati thepla
