Mango and Ginger Jam

Mango and Ginger Jam. Combine all of the ingredients in a pan and cook for 20 minutes on low heat.

Ingredients

Ripe Mango 2

(skinned and cut into cubes) (2 cups)

Sugar ¼ cup

(increase depending on sweetness preference)

Salt 1 pinch

Fresh Ginger 1 tsp

( peeled and grated)

Lemon juice 1 tsp

Method

Combine all of the ingredients in a pan and cook for 20 minutes on low heat.

Stir frequently so that it does not stick at the bottom.

Taste and adjust the sugar.

Cool completely before storing in a sterilised bottle.

Keep refrigerated for upto 1 month.
