Quick Rabdi

Preparation Time: 10 mins,

Cooking Time: 15 mins,

Makes 4 servings

Ingredients

Full-fat milk 3 cups

Fresh bread slices 2

Condensed milk 1/2 cup

Sugar 1 tbsp

For The Garnish

Cardamom (elaichi) powder 1/4 tsp

Method

  • Remove the crusts of the bread slices and discard. Grind the bread slices in a food processor to make fresh bread crumbs and keep aside.
  • Bring the milk to boil in a broad non-stick pan.
  • Add the fresh bread crumbs, sugar and condensed milk, mix well and cook on a medium flame for approx. 8 to 10 minutes, while stirring continuously and scrapping the sides of the pan.
  • Allow it to cool completely and refrigerate for 2 to 3 hours.
  • Serve chilled garnished with cardamom powder.

Quick Tava Rice

Preparation Time: 10 mins,

Cooking Time: 10 mins,

Makes 4 servings

Ingredients

Kashmiri red chillies 3

(whole dry)

Garlic cloves (lehsun) 3

Oil 3 tbsp

Onions (thinly sliced) 1/2 cup

Capsicum (thinly sliced) 1/2 cup

Chopped tomatoes 1/2 cup

Turmeric powder (haldi) 1/4 tsp

Fresh curds (dahi) 2 tbsp

Cooked rice 2 cups

Salt to taste

For The Garnish

Grated processed cheese 2 tbsp

Method

  • Combine the red chillies and garlic along with 1 tsp of water and grind in a mortar-pestle (khalbhatta) to a smooth paste. Keep aside.
  • Heat the oil on a non-stick tava (griddle), add the onions and sauté on a medium flame for 1 minute.
  • Add the chilli-garlic paste and sauté on a medium flame for another 30 seconds.
  • Add the capsicum, tomatoes, turmeric powder and curds and sauté on a medium flame for 1 more minute.
  • Add the cooked rice and salt and toss well. Cook on a medium flame for 2 minutes,while tossing once in between.
  • Serve immediately garnished with cheese.
Quick Baby Corn and Paneer Subzi
Preparation Time: 10 min,
Cooking Time: 10 min,
Serves 4
Ingredients
Baby corn, sliced 3/4 cup
Sliced paneer (cottage cheese) 3/4 cup
Sliced onions 3/4 cup
Sliced capsicum 1/3 cup
Sliced tomatoes 3/4 cup
Cumin seeds (roasted jeera) powder
1 tsp
Chilli powder 1/2 tsp
Oil 2 tbsp
Salt to taste
Method
  • Heat the oil and fry the onion . Add the baby corn and capsicum and cook for at least 3 to 4 minutes.
  • Add the tomatoes and fry again.
  • Add the cumin seed powder, chilli powder and salt. Mix well and cook for 1 minute.
  • Add the paneer and cook for 3 minutes.
  • Serve hot.
Tips
Parboil the baby corn if it is not tender.
