During weekends, Marriott Hyderabad’s coffee shop, ‘Okra’ can get quite busy. This time the icing on cake is Chef Ninja, who is extremely famous for her Thai specialty dishes, and has come all the way from JW Marriott, Kolkata. When I met her, she was happy to be able to cook her dishes, just the way they were – spicy.

During weekends, Marriott Hyderabad’s coffee shop, ‘Okra’ can get quite busy. This time the icing on cake is Chef Ninja, who is extremely famous for her Thai specialty dishes, and has come all the way from JW Marriott, Kolkata. When I met her, she was happy to be able to cook her dishes, just the way they were – spicy. And, don’t we love that? To begin with, her chicken satay was marinated with turmeric and herbs and served with peanut sauce that was topped with red chilli oil and tasted heavenly.

Likewise the much familiar Thai dishes like Som Tum (Raw Papaya salad) served with bits of bird eye chilli, Thai Green curry and Phad phai deang (Stirfried pok choy with chillies) and her signature soup Tom Saan Gai were all delightfully sharp on the palette. Wokfried flat noodles with tofu, bean sprouts tossed in tamarind sauce, on the other hand, was delicately flavoured.

The aromatic jasmine rice was served with the amazing confluence of stir fried chicken and cashewnuts, stirfried seafood with peppercorn – but the best combo for me has always been the green curry. For the desserts, Chef Rateesh put in his inputs and created the pre-dessert Lemon grass mousse with pseudo pandan icecream (created by fusing custard and cream) – the flavourful pandan and tangy lemon making for an endearing pair.

An expert in putting together flavours and textures to create an art piece out of his dessert, he put together tender coconut mousse with mango and jasmine rice pudding for the finale. Thai Master Chef will be at Marriott Hyderabad’s Okra until April 30, and one can get to taste her dishes on the dinner buffet at Rs 1,350 - plus taxes.
