Christmas Pavlova


5 medium free range egg whites 
1 tbsp honey 
250 gm lie fat natural yoghurt 
1 finely grated orange zest 
1 tbsp of orange juice 
A drop of almond extract 
A pinch of cinnamon 
200 g raspberries 
1 tbsp flaked almonds, toasted 
1 square dark chocolate 


Pre heat oven to 120 degrees Celsius and line a baking tray with parchment paper Whisk the egg whites in a clean glass bowl until soft peaks form. Add the honey slowly and continue to whisk until you have stiff peaks and. 

The meringue looks glossy 

Arrange 8 large spoonfuls of the mixture on the prepared tray. Bake for 30 minutes, then reduce the oven to 110 degrees Celsius and bake for another 1 hour. Then let the meringues cool.

Just before serving, make the topping. Mix together the yoghurt, orange zest and juice, almond extract and cinnamon. Top meringues with yoghurt mixture and scatter with raspberries, almonds and grated chocolate.
