GUJIYA
For Gujiya pastry:
All-purpose flour 2 cups
Ghee 2 tbsp
Water as required
Oil for brushing
For Gujiya stuffing:
Khoya grated & cooked 1 cup
Ghee ½ tbsp
Cashews grated 10
Almonds grated 10
Pistachios 10
Raisins ½ tbsp
Sugar powder ½ cup
Cardamom powder ½ tsp
Method of preparation:
Mix all stuffing ingredients well and keep the stuffing aside. Take the all-purpose flour and salt in a mixing bowl, pour the ghee on the flour. Rub the ghee with the flour, then add water in parts and begin to knead. Divide the dough in equal parts to make balls. Then, dust the rolling board lightly with some flour. Roll each ball to a small circle. With your fingertips, apply water all over the circumference edge, place about 1 tbsp of the khoya filling on one side of the circle, keeping edges empty. Bring together both the edges and join. Gently press the edges. Gujiya is pressed and sealed well. With a small gujiya cutter, trim the extra edges and arrange in a crusty plate/ baking tray. Brush oil to the gujiyas evenly all over.
Preheat the oven to 200°c. Place the crusty plate/baking tray in on the grill mesh rack and bake the gujiya in convection mode for 16 minutes at 200°c. (Turn once upside down in between).
ALMOND – HALWA
Ingredients:-
Almond ¾ cup
Hot Water 1 cup
Roasted Rava ¼ cup
Milk 1½ cup
Ghee 4 tbsp
Dry Fruits chopped ½ cup
Sugar ¼ cup
Soaked Kesar Milk 3 tbsp
Cardamom powder ¼ tsp
Method of Preparation:
Take hot water in a mixing bowl and soak almonds in hot water so that the skin of almonds easily peels off. Once the skin is removed, grind the soaked almonds to a coarse mixture not to a fine paste.
Step1 : Take a microwave oven safe bowl, add ghee, almond paste, roasted rava, milk, sugar, mix well and select micro mode, high power(P-100), set time for 4 minutes and press start to cook. (Stir once in between).
Step2 : After the beep, remove the bowl and add dry fruits, saffron milk, cardamom powder, mix well and cook again for 4 minutes. (Stir once in between). Serve after cooled.
MANGO PHIRNI
Ingredients:
Soaked Rice 3 tbsp
Milk ½ litre
Mango Pulp 1 cup
Sugar ½ cup
Dry Fruits ½ cup
Saffron Milk 3 tbsp
Cardamom Powder ¼ tsp
Method of preparation:
Blend the rice to make it into a coarse paste.
Step 1 : Take a microwave oven safe bowl, add rice paste, milk, sugar, mix well and cook for
5 minutes in micro mode. (Stir twice in between).
Step 2 : After the beep, remove the bowl and add mango pulp, dry fruits, saffron milk, cardamom,
Mix well and cook again for 5 minutes. (Stir twice in between).
Set to cool and serve.
THANDAI COOKIES
Ingredients:
Maida 2 cups
Butter 100 gr
Sugar 1 cup
Thandai Powder ¾ cup
Dried Rose Petals 1 tbsp
Baking Powder ½ tsp
Baking Soda ½ tsp
Saffron soaked in milk 3 tbsp
Milk ½ cup
Rose Water 2 tbsp
Method of preparation:
In a bowl, mix the butter & sugar together till it turns fluffy and creamy. Add thandai powder, rose petals followed by maida, baking powder, soda, saffron milk, milk, rose water and make a dough out of this mixture.
Make medium sized balls & make cookies in required shape.
Arrange them on crusty plate and place the plate on the grill mesh rack in the oven. Select convection mode at 170°c temperature, set time for 12 minutes and press start.
Serve hot or cool.
