HOSA opens at The Loft; unveils coastal flavours

Hyderabad: HOSA, the new restaurant and bar, opened at The Loft, taking its name from the Kannada word for "new". Led by Brand Chef Harish Rao, every dish stems from regional research before being thoughtfully reimagined. Head of Bars Varun Sharma manages the drinks programme, utilising seasonal ingredients and house-made infusions.

The establishment offers distinctive culinary creations including Hosa Fried Chicken paired with cucumber yoghurt and smoked green chilli chutney, alongside Mutton Kebab served with raw mango and chickpea mousse. Chettinad Lamb Chops feature classic regional masala softened with garlic cream, while Toddy Shop Prawns incorporate red chilli masala and raw mango salad, paying homage to coastal Kerala.

Desserts include Home-made Chocolate Ice Cream, designed to provide a clean palate reset after spicy courses, and Coconut Snow featuring jasmine granita and almond crumble.
