White Chocolate Pomegranate Parfait
Ingredients
- Egg yolk 6 no
- Sugar 115gms
- Water 85 gms
- White chocolate 142 gms
- Whipped cream 356 gms
- Pomegranate molasses 100 gms
- Basil 1 bunch
- Vanilla sponge 1
- Gelatin 20 gms
- Egg yolk 6
- Sugar 115gms
- Pomegranate puree 186 gms
Method of preparation
1 Make a salsa with pomegranate molasses and chopped basil, and then keep aside.
2 Place the egg yolk in the mixing bowl.
3 Dissolve the sugar in sufficient water and boil in a 115`c then pour the syrup over the egg yolks and continue mix with whisk till it gets room temperature.
4 Add gelatin (soaked one) into the egg mixture.
5 Fold pomegranate puree and whip cream together.
6 Place the mixture in desired cups and keep it into the refrigerator.
7 Once it is set, spray with chocolate and garnish with pomegranate basil salsa.
