Ultimate Guide to True Weight Loss”, the latest book written by food scientist Suhasini Mudraganam (with her team) aims to dispel myths and misconceptions about food and weight loss. For instance, the book dismisses the belief that it is calories alone that determines one’s weight. The book suggests that one should not count calories as it is hormones which determine one’s weight and through food one can control these hormones. The book talks about the weight management programme, Truweight, which is about attacking the seven root causes of obesity like gut bacteria imbalance, invisible inflammation, hormonal imbalance, nutritional deficiency, etc. Suhasini is a certified food scientist and nutritionist. An interview with her is a fascinating peek into the profession and guide for good eating.
Why did you decide to study food science?
I believe that food is the best medicine. So, I wanted to study food and did MSc in Food Science and Nutrition from Sri Satya Sai Institute of Higher learning, a premium institute providing best quality of education. Later I pursued MS in Food science and Nutrition from university of Missouri, Columbia. The university has some of the best infrastructure for food science research. I worked with my professor as a research assistant on developing low fat ice cream. And later, I worked with American Ingredients Company, Kansas City, USA in the food quality department.
What exactly is food science and why do you think students should study this subject at college or university?
Food science is the detailed study of the physical, biological and chemical make of the food. Food processing is also an important part of food science. By applying the findings of research, a food scientist is responsible for developing safe and nutritious foods. The food we consume on a daily basis is the result of extensive food research, a systematic investigation into a variety of food properties and compositions. After the initial stages of research and development comes the mass production of food products using principles of food technology. Then comes sensory testing of foods. All of these interrelated fields contribute to the food industry – the largest manufacturing industry.
More and more people are dependent on ready to prepare meals due to their busy life style. As food scientists it becomes imperative to work on products that are natural, nutritious and health promoting.
