Sweet potato bake
Ingredients:
- Cashew nuts, finally chopped 50 gms
- Walnuts, finally chopped 50 gms
- Sweet potato 250 gms
- Roasted Sesame seeds 2 tsp
- Ginger paste ½ tsp
- Cows ghee 3 tsp
- Rock salt Lemon juice to taste
Method:
- Boil, peel and mash the sweet potato.
- In a wok, heat ghee and sauté the ginger paste, cashews and walnuts.
- Add in the mashed potato and rock salt. Mix well.
- Cool and pour mixture in a flat baking tray.
- Sprinkle with roasted sesame seeds.
- Bake till it browns on the top.
- Squeeze lemon juice before serving.
- Serve with mint chutney, cucumber and pomegranate salad garnish with grated coconut.
