It’s March and time for one of my favorite festivals-Holi! I love the different colours and vibrancies that occur through the day. This festival always serves as a good reminder for me that there are more colours that I can add to my plate than just the good old green. The more naturally colourful your meals are, the more likely it is that you will have an abundance of resistance boosting and cancer fighting nutrients in your body

While green vegetables like Spinach, Green Capsicum, Cluster Beans, Coriander Leaves, Bitter Gourd, etc. are very nutritious, we are also have access to fruits and vegetables of different pigments which give us other nutrients.

If you want to be hale and hearty think about adding violet, red, yellow, orange and white to your plate as these colours are overflowing with carotenoids. The carotenoids, Beta Carotene, various vitamins and Lycopene are essential pigments that add the colour to your food. They are powerful antioxidants, boosting overall health as well as keeping your weight down.
