Oatmeal is replete with fiber. However, nature has not endowed lots of taste to it. So, instead of having the oatmeal with milk have it as a khichdi. Eat it differently.

Ingredients:

- 2 cups organic stone cut oatmeal/old-fashioned rolled oats

- 2 thai green chillies

- 1 teaspoon of freshly crushed peppercorns

- 1/2 cup of vegetables (of your choice)

- 1 cup moong dal

- 2 teaspoons of toasted nuts (of your choice)

- 4 teaspoon of oil

- 1 teaspoon jeera (cumin seeds)

- 4 sprigs of curry leaves

- Salt to taste

- 4 cups of warm water

Method:

Heat the oil on medium heat. Season it with cumin seeds, fresh pepper powder, green chillies and curry leaves. Let it splutter. Now, add washed moong dhal and vegetables to the seasoning (tadka) and saute for 3 minutes.

Now, add oats and water. Then, pressure cook the paste for three whistles. Garnish with your choice of toasted nuts and drizzle with two teaspoon of olive oil. Your oatmeal khichdi is ready to be served.
