Tart base 1no

Pastry cream 30grms

Fresh fruit cubes as required

Cold gel 10ml

Pastry cream

Milk 190ml

Castor sugar 60

Vanilla essence 5ml

Egg yolk 2no

Corn flour 8

Refined flour 10

Method of Preparation

Making the pastry cream

Whisk together the caster sugar, vanilla essence, egg yolk, corn flour and flour. Boil milk and add a bit to the flour mix to thin it down, then add the flour mix to the rest of the milk. Cook on low heat till it thickens. Whisk to cool down.

Assembling the tart

Brush the tart shell with some melted chocolate. Pipe or spoon the pastry cream into the tart shell. Arrange fruits as required. Brush with gel to give it a lovely gloss.
