Chocolate and Biscuit Layered Pudding
Ingredients
For chocolate sauce:
- Milk1 litre
- Drinking chocolate 4 tbspn
- Corn flour 6tbspn
- Sugar (or to taste) 5 tbspn
- Biscuits 4 packets
- Nuts or sprinkles for garnishing
[Optional -Add coffee powder / bournvita/ walnuts as per your liking and taste]
Method
- Mix the chocolate sauce ingredients well and stir in a heavy bottom pan till it thickens to a sauce-like consistency. Set aside to cool.
- In a shallow dish, add a layer of biscuits, followed by a thick layer of sauce. Repeat process for three layers.
- Set in fridge for two hours
- Cut into cake size pieces and serve garnished with nuts.
Chocolate Cookies
Ingredients
- All-purpose flour 1 1/4 cups
- Unsweetened cocoa powder 1/2 cup
- Baking soda 1 tsp
- Baking powder 1/4 tsp
- Salt 1/4 tsp
- Sugar 1 1/4 cups
- Butter 1/2 cup
- Large egg 1
Method
- Set two racks in the middle of the oven. Preheat to 350°F / 180°C
- Sift the flour, cocoa, baking soda, baking soda and salt.
- In a food processor, or in a bowl, thoroughly mix the flour, cocoa, baking soda and powder, salt, and sugar.
- Add the butter and pulse until it resembles fine breadcrumbs.
- Add the egg and continue processing or mixing until dough comes together in a mass. This take seconds.
- If mixing in a bowl, mix the dry ingredients. Add the butter and use fingers or a fork to mix till it resembles bread crumbs. Add the egg and continue mixing till it forms a dough (takes very little time for it to do so).
- Take rounded teaspoons of batter and place on a parchment paper-lined baking sheet approximately two inches apart. With moistened hands, slightly flatten the dough.
- Bake for nine minutes. Set baking sheets on a rack to cool.
Chocolate Pinwheel Cookies
Ingredients
- Butter 100gms
- Powdered sugar 1 cup
- Vanilla essence1 tsp
- Egg 1
- Flour 2 cups
- Baking soda ½ tsp
- Cocoa powder 2 tbsp
Method
- Mix butter, sugar and vanilla essence. Next add the egg and mix well. Then add flour and baking soda to make a soft dough.
- Divide the dough in two halves and add cocoa powder to one half.
- Roll out two large round thickcircles from each half and layer them one on top of each other.
- Now roll them into a roll like a swiss roll and keep in the fridge for half an hour.
- Cut into 1/4th of an inch slices and place on butter paper on a baking tray.
- Bake for 15 to 20 minutes at 180deg C in the oven.
- Cool on a wire rack and store.
