The Gateway Hotel manager Shabul Hassan said that the hotel welcomes all food lovers to its 10-day Royal Biryani fare which started on Wednesday. He said that variation in biryani can be with mutton, chicken, fish, egg, prawns and vegetables garnished with golden brown onions.

He further said that the traditionally sealed Earthen Biryani Handi will be opened at the time of service and served fresh with mixed ‘raita’, ‘mirchi ka salan’ and ‘gravy’, Yakhni was prepared overnight and placed with the rice in layers within the handi and cooked on slow fire, he added.

He said that a team of six chefs specialised in Biryani preparation led by Arjun Yadav, Ali Koushar, Rakesh Singh Rana and Srinivas Nallu are behind 40 varieties of Dum Biryanis for the first time in Vijayawada.

He named few like Sahi Murgh Biryani, Chicken keema biryani, Chicken joint biryani, Ulavacharu biryani, Cut mirchi chicken biryani, Bhuna Murg biryani, Chicken tikka biryani, Tandoori chicken biryani, Sahi gosht biryani, Aawadhi mutton biryani, Talahua gosht biryani and Kabuli gosht biryani.

He said that in vegetarian section, Tawa subzi biryani, Subz Ulavacharu biryani, Paneer Cashew biryani, Veg Shabnam biryani, Paneer Makhani biryani, Ambada Subz biryani are a few to name. The Royal Biryani fare at GAD starts at 7.30pm, he added.
