The trick is not to overdo it such that it becomes dry and fibrous. It has to be just the right amount of juicy and soft. The salt you use to flavour is just equally important. They say using rock salt is better as it carries much more character than the refined salt. The chicken is usually stuffed with meat of its own texture.
For chicken roast, one can go for chicken mince flavoured with a herb like rosemary and white bread crumbs soaked in milk for binding. The binding gives more body. For any grill the default accompaniment is potato/ carbs. Any other vegetable carb will also be good for that wholesome experience.
Try roasting a whole potato, garlic, onion, pineapple (that also acts as a tenderiser). That way the vegetables will not overcook and also leave out their flavour onto the chicken. Roasted chicken leaves out juices that can be used for glazing.
