Considering that bhindi is a nutritional powerhouse, it should be a part of your regular diet. Here is an interesting recipe to grow your love for it!

INGREDIENTS

500 gm lady fingers (bhindi)

1 tsp ginger paste

1/2 tsp red chilli powder

1 tsp coriander (dhania) powder

1/2 tsp dry mango powder (amchoor)

1/2 tsp garam masala

3/4 tsp salt, or to taste

2 big tomatoes – chopped

1 tsp lemon juice

A pinch of asafoetida (hing)

1 tsp fennel (saunf)

1/2 tsp mustard seeds (rai)

1/2 tsp onion seeds (kalonji)

DIRECTIONS

Wash bhindi and wipe dry. Cut the bhindi lengthwise from the middle making two pieces from each bhindi. Keep bhindi in a dish. Sprinkle 2 tbsp oil on it. Mix well. Put them in the oven on combination mode (micro+grill) for 15 minutes or till cooked & crisp. Keep aside.

In the separate small dish put two tbsp oil & achari spices. Microwave for three minutes. To the bhindi, add achari spices, dry masala powders, salt, ginger paste, tomatoes and lemon juice. Mix very well. Microwave for four minutes.
