Hyderabad-based chefs Sanjay Thumma (popular as Vah Chef) and Vikram Simha, together known as ‘Spice Brothers’ have launched India’s first Fast Casual Dining (FCD) restaurant – Indi Blaze at Hitec City. Indi Blaze is a “fix your own bowl” restaurant and is a blend of quick service and sit-in dining.  

Hyderabad-based chefs Sanjay Thumma (popular as Vah Chef) and Vikram Simha, together known as ‘Spice Brothers’ have launched India’s first Fast Casual Dining (FCD) restaurant – Indi Blaze at Hitec City. Indi Blaze is a “fix your own bowl” restaurant and is a blend of quick service and sit-in dining.

It is primarily a counter service but is more upscale with a greater focus on ambiance and décor. “We are a concept-based restaurant and believe in fast, healthy, tasty and affordable food with eco-friendly disposal crockery. The cuisine is modern Indian food with influence from American and Mexican food,” Chef Vikram Simha shares.

Chef Sanjay Thumma’s culinary videos on YouTube garnered over 300 million viewers across the world and honoured by the channel for lifetime views. Chef Vikram Simha started his career with ITC Hotels, played a key role in the setting up of Peshawri, ITC Kakatiya, Hyderabad and then moved to Ohris before getting together with Chef Sanjay Thumma.

“Our restaurant uses the freshest ingredients to create its gastronomic masterpieces. We also import produce from various parts of the country to give that authentic feel. The highlight of the menu is the Hearty bowl, EdiBowl and Porotilla ( a blend of Indian parantha and Mexican tortilla). Diners can choose either a meat or a vegetarian selection for their bowl.

Following that, they have a choice of grains and pulses. Once they have decided the main aspects of their meal, they must decide what to add to it. From sautéed vegetables to tomato salsa, patrons have a gamut of choices to choose from. To top it all off, they can select from our range of sauces to make their meal perfect. The Edibowl is an edible bowl in which your meal is served and the Porotilla is a wrap.

The menu also has the Indi Pizza, a unique Indian take on the pizza, the ever popular Kebab wrap, and the Indi Blaze take on the staple ‘Hyderabadi Biryani’. The menu will be continually innovated to create an exotic and interesting blend that will make the diners curious to try something new,” Chef Vikram informs.

This is the pilot project of Indi Blaze, and the duo is planning to roll out outlets across India. It will be a pioneer and will enjoy the first mover advantage in fast-causal restaurant movement in this country. According to Spice Brothers, it is going to be the fastest growing segment in India in near future.
