Mexican Style Soft Tacos
Mexican Style Soft Tacos. Chop the onion and tomato and mix with the lemon, salt, pepper and green chilli. Set aside.
8 Rotis, made into 7 inch discs and cooked on a griddle
Chicken mince as above or any dry chicken, shredded 1 cup
Medium tomato 1
Medium onion 1
Iceberg lettuce (optional) ½ cup
Juice of lemon ½ tsp
Salt and pepper to taste
Finely chopped green chilli 1
Coriander leaves for garnish
Chop the onion and tomato and mix with the lemon, salt, pepper and green chilli. Set aside.
Warm a roti and place 2-3 tablespoons of the chicken in the centre and spread lengthwise.
Top with 2-3 tablespoons of lettuce and the tomato onion salsa. Add a dash of lemon juice and garnish with the coriander leaves and serve. This can be assembled before serving else the tacos go soft.
