Lip-smacking and delicious to the last bite; kebabs are the top choice for the locals of Hyderabad. The origin of this cuisine in the city is from the Nizams of Hyderabad. Here the Moghul love for meat was blended with the fiery spices of the south to create what is truly one of the greatest of dishes of India. The Hyderabadis like their meat in large chunks and heavily spiced, unlike the delicate kebabs of Lucknow (Avadh), where the meat is ground so fine that the palate misses all the exotic flavour. Also the subtle fragrances and flavours used in Avadhi cuisine are not to be found here.
Meats are spiced with fiery chilies, and tempering this fire is the sourness of raw mangoes, tamarind, lemon, yoghurt and sometimes papaya paste. The lanes and bylanes of Charminar are now crowded with stalls and shops which offer the most delectable tongue searing kebabs. Tawa kebabs, Grilled kebabs, Charcoal Kebabs, Tandoori Kebabs, Patthar ka Gosht, Shami Kebab, Seekh kebab, Tandoori Jhinga, Sikandari Raan, Palak Kebab, Paneer Tikka Kebab, Boti Kebab, Chicken 65 Kebab are the various types in which they are readily available in the smallest shops on streets to hi-end restaurants. Some of the places which offer these delectable kebabs in the city are Paradise hotel, Bade Miya Kebabs, Siddique, Hyderabad House, Angeethi, Kebab-e-bahar, ITC Kakatiya and so on.
